Pumpkin spice and everything nice. It's October and pumpkin is everywhere. I decided to create a perfect pre-workout treat for this season, and man, am I satisfied. The pumpkin protein balls have a great consistency, are packed with fiber and protein and taste delicious! They are so simple to make and only have clean ingredients. Give them a try for yourself; you won't be disappointed. I'll be sharing them with my friends and family this holiday as a little healthy gift. 

Protein Pumpkin Balls with fiber. Perfect healthy snack for Halloween and fall. Treat yourself to this delicious fitness snack.

Pumpkin Protein Balls

INGREDIENTS:

2/3 c pumpkin puree
1/2 c oats
1/4 c ground flax
1/4 c almond meal
1/4 c protein powder
1/4 c pure maple syrup
1/2 tsp cinnamon
1/4 tsp ground ginger

TOPPINGS:
1/2 c unsweetened coconut flakes

Place all ingredients in a food processor, except for the coconut, and mix until well combined. Roll into small balls and place in freezer for 30 minutes. Remove from freezer and roll in coconut flakes. Allow the balls to lightly harden in the refrigerator and then enjoy! These can be stored in the refrigerator for one week or in the freezer for 3 months.
