Maca is one of my new favorite superfoods to add to my diet. I’ve been experimenting on how to incorporate it into different foods such as smoothies and bowls of oats, but today I decided to try something a little different and use it in baking. Maca has a nutty taste to it and many great benefits.

What is Maca?

This superfood is a cruciferous vegetable (such as arugula, cauliflower, broccoli, kale) found in the Andes in Peru. In their native form, they have the appearance of a radish or turnip, but is usually served in powder form after being grounded down upon harvest.  Maca is considered an adaptogen which is a natural substance that helps the body deal with stressors.*

Maca Blackberry Banana Bread

Ingredients:

DRY:
2 c rolled oats
3 medium ripe bananas
1/4 c vanilla protein (or sub for 1/4 c oats)
1/4 c pure honey
2 eggs
4 tbsp maca powder
2 tbsp almond butter
1 tsp baking soda
1 tsp vanilla extract
1 c frozen blackberries

Directions:

  1. Preheat the oven to 350.

  2. Spray a bread pan with coconut or olive oil.

  3. Place all ingredients (except the blackberries) in a food processor and pulse until well blended.

  4. Mix in the blackberries.

  5. Pour batter into bread pan, placing additional berries on top.

  6. Bake for 35 mins - Tastes best when slightly undercooked. Cool slightly before cutting and serving.
