Meal prep is super helpful, but even so, I love SIMPLE and easy baking. I've been craving lemons all summer because I love the tart yet refreshing taste. After some consideration, a light-bulb went off – Lemon Coconut Protein Balls! I hate cleaning my food processor after mixing sticky things, so I did away with it for this recipe. All you need is a bowl and spoon and the ingredients below!

Lemon and coconut are a match made in heaven if you ask me. This combination is perfect for a snack or a late-night treat. The protein balls have a great texture! I eat 2-3 per serving.

Lemon Coconut Protein Balls

INGREDIENTS:

1/2 c coconut flour⠀
1/2 c rolled oats⠀
1/4 c unsweetened coconut⠀
1/4 c vanilla protein⠀
1/4 c coconut oil⠀
1/4 c honey⠀
1 tablespoon almond butter⠀
1 teaspoon vanilla⠀
1 lemon squeezed⠀

Mix all of the ingredients in a mixing bowl and stir with a spoon until well combined. Roll into small balls with your hands and place on a plate. These do not need to be refrigerated so I keep them in a tupperware on my counter. Enjoy!
