Healthy Matcha Muffins
Matcha is basically everywhere in the health food space. Right now, I have to admit that I'm joining the craze. I've been adding this superfood to my smoothies and baked goods because I can't get enough. I decided to try matcha in muffins because why not. And what do you know, they turned out BOMB. Give them a try and see for yourself. These bad boys are made without sugar, oil, butter, or flour. They are very moist and delicious. Ready, set, go.
What is Matcha?
This superfood is a powdered green tea grown only in Japan. It's leaves are harvested, de-stemmed, sorted, and crushed to a powder. It is packed with antioxidants. Tufts University experts conducted a test that discovered matcha contains 20 times more antioxidants more than pomegranates or blueberries. Crazy right?

Place oats in a blender or food processor. Blend until oats turn to flour texture. Place the rest of the ingredients in the processor and pulse until fully combined.
Line a muffin tin with cupcake holders. Evenly distribute the mixture into 6 tins. Bake at 350 for 15 minutes.
OPTIONAL: Slice strawberries in half and place one on top of each muffin. Heat dark chocolate until melted and drizzle on top.
Makes 6 muffins.
