Flourless Fiber-Packed Protein Waffles
You asked for it, I delivered. I FINALLY purchased a waffle maker so naturally that meant I needed to test that baby out. I wanted a healthy version of the classic recipe that would keep me full and taste delicious. It is the perfect consistency and packed with fiber and protein. Enjoy!
Fiber-packed Protein Waffles
2 egg whites (~1/4 c)
1 Tbsp ground flax
1 scoop protein powder
1/4 tsp cinnamon
1 Tbsp almond butter
Heat waffle maker to medium and spray with olive oil. Crack 2 eggs using only the whites and place in a bowl. Whisk with a fork until slightly airy. Add protein powder, ground flax, and cinnamon to the egg whites and which again. Add 1/2 mashed, ripe banana and mix well. Pour batter into waffle maker and cook until golden brown. Top with mango, drizzled almond butter, and the other 1/2 of banana.
