Time is of the essence, am I right? I love recipes are the simple and easy and also delicious. Breakfast is my jam so I decided to create a quick recipe that can be enjoyed any time of the day. This one has perfectly portioned part of healthy fats, veggies and protein. Plus is only takes 10 minutes with 3 ingredeints. 

Eggs in Zoodle Nests. This meal is so simple, yet so delicious. With just three ingredients and less than 10 minutes, make a perfectly portioned meal.

Cheers to a simple and tasty recipe. I cooked AND served mine in a cast iron skillet for added flavor and extra simplicity. I was craving a quick meal after my workout and found these ingredients in my fridge. I was too lazy to make a full salad, but I wanted proteins and veggies. This is the result. Yummy, easy and fueling.

Eggs In A Zoodle Nest

INGREDIENTS:

2 eggs
1 small zucchini
1/4 c shredded carrots
Optional:
1/4 avocado
Crushed red pepper
Sea Salt

On a stove top, heat your cast iron skillet to medium-low. As it's warming, create zucchini noodles with a spiralizer (or buy them pre-spiralized from a grocery store). Spray the skillet with olive oil and place the zoodles in the pan. Create two little holes so the pan shows through. Crack your eggs in the nests. Add carrots. Cook for about 10 minutes or until the yolks are to your likely. Serve in the skillet (use oven mitts!) and top with sliced avocado, crushed red pepper or any spices you like.
