These are loaded with fiber, protein, healthy fats and detoxifying ingredients. I am now OBSESSED and so is my husband (WIN-WIN, if you ask me)!

Coconut Lemon Poppy Muffins


1/2 c vanilla protein powder
1/2 c coconut flour
1 Tbsp poppy seeds
1/4 tsp baking soda
1/2 tsp baking powder
2 Tbsp unsweetened coconut flakes

2 Tbsp agave (subs: pure maple syrup, honey or date syrup)
1 egg
1 lemon (juiced and zested)
1 banana (mashed)
1/3 c coconut milk
1 tsp vanilla extract

Combine dry ingredients. In a separate bowl, combine wet ingredients. Mix the contents of the two bowls together. 

Line a muffin tin with cupcake holders. Evenly distribute the mixture into 7 tins. Bake at 350 for 25 minutes. 

Makes 7 muffins.
