So who doesn't love a warm and cozy breakfast for these chilly months? I was on a mission to create a special holiday treat filled with protein and whole ingredients. Apple and cinnamon is ALWAYS the perfect combination, is it not? This breakfast tastes like apple pie, yet it is healthy and totally sugar-free, oil-free, and gluten-free! It's safe to say, this is my new go-to morning meal throughout the winter. Get baking and enjoy!

Cinnamon Quinoa Baked Apples. The perfect treat for breakfast during the winter months. These warm stuffed apples are fueling, so delicious and easy.

Cinnamon Quinoa Baked Apples

INGREDIENTS: (makes 2)

2 apples
1 c cooked quinoa
1 scoop vanilla protein powder
1/2 c almond milk
1 tsp cinnamon

TOPPINGS: (optional)
Pumpkin seeds, granola, pure maple syrup, etc.

Cook quinoa on stove top according to directions on package. (Use almond milk instead of water for a creamier base). Cut off the top of the apple. Cut a circle into the apple base without cutting all of the way to the bottom. Scoop the apple center out with a spoon. Separate the core and the rest of the apple chunks. Combine the apple chunks with the cooked quinoa, almond milk, cinnamon and protein powder. Place mixture inside apple cup. Place on baking tray and cook for 10 minutes. Top with whatever delicious ingredients you are craving. Let cool for 1 minute and enjoy!
