Healthy Buffalo Chicken Nuggets
I must say, I am a HUGE spice fan. I love spicy foods, probably because my family would make buffalo wings every single Saturday night. No joke, we had them every week without fail. The crispy and spicy levels were to die for. Needless to say, I had to recreate a healthier version and in nugget form because I never wanna grow up.

This healthier take on buffalo chicken nuggets is sure to impress. But there is a reason I chose these ingredients.
Chicken and plain greek yogurt are very high in protein
Cayenne pepper is known to reduce hunger levels, increase circulation, and aid in digestion
Oat flour is a complex carb and is a great alternative to breadcrumbs
Pair these chicken nuggets with a few slices of celery and you have an epic childhood meal made adult.
Makes 2-3 servings
Healthier Buffalo Chicken Nuggets
2 large chicken breasts
1 tsp + 2 tbsp buffalo sauce
1 cup plain Greek yogurt
1/2 c oat flour
1 tsp cayenne pepper
1/2 tsp sea salt
1/2 tsp parsley
Heat air fryer (or oven!) to 400 degrees and spray with olive oil.
With kitchen scissors, cut chicken into nugget form.
Gently beat an egg + 1 tsp buffalo sauce in a bowl.
Mix oat flour, cayenne, sea salt, and parsley together in a separate bowl.
Using tongs, dip chicken in egg mixture, then in oat mixture, and place in air fryer. Repeat for all nuggets.
Cook in fryer or oven for 18 minutes and gently toss half way through.
Mix Greek yogurt and 2 tbsp buffalo sauce together and serve as sauce.
