Brussels Sprout Summer Salad

Brussels sprouts are my jam! I love how versatile they are: cook them, roast them, bake them, slice them. With the warm weather finally here, I decided to make this delicious summery salad that is sure to refresh your life. This recipe is super simple and easy to make so it is perfect for barbecue party.



Brussel sprouts are a vegetable in the same family as kale, cauliflower, and cabbage.

  • High in fiber

  • High in Vitamins K & C

  • Contains antioxidants - specifically kaempferol

  • Contains compounds that may help lower levels of inflammation


Pair this salad with some lean protein like bbq chicken breast, tuna, or shrimp to give you a well-balanced meal. You can also serve as is for a side dish.

Brussels Sprout Summer Salad


1/2 lb brussels sprouts
1/2 - 1 avocado (to liking)
3/4 c red cabbage
2 tbsp pumpkin seeds, salted & roasted
2 limes, juiced
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp sea salt

  1. Add the slicer attachment on to a food processor. Slice brussels sprouts thinly.

  2. Chop cabbage and avocado.

  3. Add veggies to bowl and top with pepitas.

  4. Mix dressing ingredients and pour over salad. Toss and serve.
