Healthy Avocado Chicken Salad made with greek yogurt. No mayo!

Chicken salad is one of my all-time favorite foods. I was set on a mission to find an easy and healthier alternative to this homemade meal, and man did I find it! The perfect combination of sweet and salty, plus avocado. Does it get any better than this? I think not. Give it a try and enjoy!

Healthy Avocado Chicken Salad

INGREDIENTS:

2 slices Ezekiel bread
4 oz chicken breast
1/4 c red grapes
2 tbsp sliced almonds
1/4 avocado
1/4 c plain greek yogurt
1 tsp lemon juice
1/8 tsp garlic powder

Heat oven to 350 degrees. Spray pan with olive oil and cook your chicken breast for 15 minutes. Remove and let cool. Toast your bread. While your bread is toasting, mix avocado, greek yogurt, lemon juice and garlic powder in a bowl. Mix in the almonds. Chop grapes in half and chicken into dices and add to the avocado mixture. Spoon onto the toast and enjoy your healthier, protein-packed chicken salad.
