Sweet and Savory Chicken Sausage Salad
Sometimes you need a salad but you have those sweet cravings too. This salad was created to combine sweet and savory tastes because eating kale doesn't have to be bland. My mouth was watering big time while I was throwing this together. It turned out so well, not to mention it looks pretty colorful as well! I hope you enjoy.
Sweet and Savory
Chicken Sausage Salad
2 c fresh kale
1 chicken sausage link
1/4 c bean sprouts
1/2 c cucumber
1/4 c cooked quinoa
2 Tbsp reduced sugar craisins
1/4 shredded carrots
1 Tbsp sunflower seeds
1 Tbsp feta cheese (or almond cheese)
Heat a pan over the stove on medium. Cut your chicken sausage into bite-sized pieces and place in the pan. Cook for 10 minutes flipping half way through. Remove from heat and let cool. While your sausage is cooling, prepare your veggies. I like to use kitchen shears to chop the kale into small pieces. Toss your veggies in a bowl and top with seeds, cheese, and your cooled sausage. I prefer to pair this with a bbq-based vinaigrette.
