Blueberry Protein Pancakes

I have returned from my Italian adventure and although I absolutely loved all of the food I ate, my body was craving some of my normal meals. I make pancakes at least twice a week for my breakfast, and each time I seem to craft something new. These are my latest concoction: packed with protein, fiber, antioxidants, and they are DELICIOUS. Give them a try, I dare you.

Blueberry Protein Pancakes

INGREDIENTS:

1/2 c frozen blueberries
1/2 mashed ripe banana
2 egg whites (about 1/4 c)
1 scoop Further Food Collagen Protein
1 scoop vanilla protein powder

TOPPINGS:
Plain greek yogurt
1/8 c frozen blueberries
1 tbsp sliced almonds
Sprinkle of flax seed

Mash the ripe banana into a bowl. Add egg whites and protein powders and whisk until combined. Gently stir in frozen blueberries until thoroughly mixed. Place a skillet on medium heat and spray with coconut oil. Pour batter into skillet in individual circles. Flip pancakes once you see the batter bubbling. For the toppings, heat frozen blueberries until softened and mix together with greek yogurt. Drizzle on pancake stack and sprinkle almonds and flax seeds on top. Try to resist chowing down on these before you take a pic and tag me @fitstagram.michelle.
